Popular Manchester pizza business Rudy’s is opening its latest venue in its home city - and starting an academy alongside it to train cooks to produce perfect pizzas as well.

The latest venue for the concern, which has become something of a Manchester institution since it opened its first eatery in 2015 in Ancoats, will be on Portland Street with the doors slated to open this spring. The place will be the sixth Rudy’s in Manchester and the firm is offering its devoted legions of supporters the chance to get their hands on its classic Neapolitan pizza for free when it opens.

As well as satisfying Mancunians’ insatiable passion for pizza, the new eatery will also have a training academy where chefs wanting to learn how Rudy makes this Italian classic can discover its secrets.

What is the new Rudy’s restaurant and pizza academy?

Rudy’s sixth Manchester eatery will be located on Portland Street in the old Dawsons Music & Sound site. It will be a two-storey restaurant with a mezzanine level and will have space for 120 people to eat.

Rudy’s started out in Ancoats in 2015 and since then its authentic Neapolitan pizzas and its menu based around classics from the city of Naples such as marinara, margherita and calabrese have proven a massive hit with diners. When the Portland Street venue opens Rudy’s will have no fewer than six Manchester venues and 16 pizzerias across the UK as a whole.

As well as serving up pizzas, the new venue will also be the home of a training academy where experienced and rookie chefs alike can learn how Rudy’s makes its dishes and follows Neapolitan traditions. It will provide a structured training programme for new cooks and everyone who joins Rudy’s in a back-of-house role will start out with the company in the academy.

It is hoped the Rudy’s Pizzaiolo Academy will welcome over 100 pizza chefs through the doors in its first year of operation. They will learn a host of tips and tricks to create a pizza a southern Italian would be proud of, including the way pizzas are cooked in an oven for just 60 seconds to produce a soft and light creation with a raised rim which is known as a cornicione.

The official opening date for the new pizzeria is yet to be confirmed, though Rudy’s has said it will be this spring. If you sign up for more information about the new place on the Rudy’s website, you will be in with a chance of being sent an email which will entitle you to grab a free pizza.
